If you want to work in the IT there's basically one type of visa you can get: the Engineering Visa.
To be eligible for that you need either an university degree in an IT related course (Enginnering, CS, etc.) or more than 10 years of documented experience in the IT field. Note, 10 years, not one day less.
It looks like having a degree would make thing a lot easier but there are a lot of opportunities anyway, especially if you have a lot of experience. The Japanese IT job market is very busy these days.
To demonstrate your working experience you will need to show signed statements from you previous employers. The statement has to show the starting and end date and the duties and title you had. That is usually enough.
Obviously the documents you bring to the Immigration Bureau once you apply for an Engineering (or whatever) Visa need to be translated in Japanese, the Italian Embassy has a list of accredited translators. If you need an advice I'll be happy to refer you which one I preferred.
The process takes from 2 weeks to 2 months, the average time being 1 month.
